Mushroom Rice Stuffing

Ingredients:

2 tsp. butter or olive oil
¼ cup diced onion
¼ cup diced celery
¼ tsp. minced fresh garlic
3 cups thinly sliced mushrooms
½ tsp. salt
Dash each: pepper, tarragon leaves, and thyme leaves
2 cups cooked rice
1 Tbs. diced pimiento
2 tsp. chopped fresh parsley

 

Directions:

Heat butter or olive oil in a 9-inch nonstick skillet.  Add onion, celery, and garic and sauté until vegetables are softened.  Add mushrooms, salt, pepper, tarragon, and thyme.  Cover and cook, stirring occasionally, until mushrooms are tender.
