Tuna Melt

Ingredients:

2 lg. cans tuna, drained
2 tablespoons minced onion
2 tablespoons chopped celery
2 tablespoons chopped fresh parsley
1 teaspoon red wine vinegar
1/4-1/3 cup Miracle Whip Salad Dressing
4 slices Italian bread
4-6 slices cheese (American, Cheddar, or Swiss)
1 ripe tomato, sliced
1 ripe avocado, sliced, dressed with lemon juice to prevent browning
Salt & Pepper

 


Directions:

Combine the tuna, onion, celery, parsley, vinegar, and salad dressing in a bowl. Stir until well combined. Taste and season with salt and pepper as desired.

Preheat the broiler. Lightly toast the bread on both sides.

Spread some tuna salad on each slice of bread. Top with a half-slice of cheese (or more if you want), add sliced tomatoes and another half-slice of cheese. Place under the broiler just until cheese is melted.

Top with avocado slices and serve.
