Ingredients:
First, make this versatile and tasty American Heart Association herb mix. I keep a small jar of it on my spice shelf and use it in lots of dishes.
American Heart Association Herb Mix
½ teaspoon cayenne pepper
1 tablespoon garlic powder
1 tsp. each of the following, ground* seasonings:
basil, thyme, parsley, savory, mace, onion powder, black pepper, sage
*If you start with fresh leaves, use 1½ teaspoons of basil, parsley, and sage, and 1¼ teaspoons of thyme and savory.
Combine all seasonings in a blender jar. Blend the ingredients at medium-high speed until they are ground.
Chicken Cacciatore
1 small broiler-fryer, skinned and cut into serving pieces
AHA herb mix (or other no-salt seasoning)
Salt, if desired, to taste
Freshly ground black pepper to taste
1½ tablespoons olive oil, divided
1 medium onion, sliced
1 large clove garlic, minced (1 teaspoon)
1 16-ounce can stewed tomatoes with their juice
1 16-ounce can tomatoes with their juice
½ cup white wine
12 ounces wide egg noodles |

Directions:
1. Sprinkle the chicken pieces generously with herb mix. Add salt and pepper to taste.
2. Heat 1 tablespoon of the olive oil in a large skillet with a cover, and brown the chicken will on both sides. Remove the chicken from the skillet, and set the chicken aside.
3. Add the remaining oil to the skillet, and sauté the onion and garlic until caramelized.
4. Add the stewed tomatoes with their juice, tomatoes with their juice, and wine, and bring the mixture to a boil.
5. Add the browned chicken pieces, reduce the heat, cover the skillet, and simmer the chicken for about 25 minutes or until the chicken in cooked through.
6. Meanwhile, cook the noodles according to package directions. Transfer the noodles to a serving platter, place the chicken on top, and spoon the sauce over them.

Notes from Kim: The key to making this tasty recipe is to not skimp on the seasoning in step 1, don’t rush the browning of the chicken or the onions and garlic, and be sure to use stewed tomatoes because they have some seasonings in them that simple canned tomatoes don’t have.
