Chicken and Rice Casserole

Ingredients:

1 pkg. Lipton Onion Soup Mix
1½ cups uncooked rice
1 Tbs. butter or olive oil
1 tsp. salt
1 small onion, chopped
1 lb. diced chicken, canned or fresh, or 6-8 small chicken pieces with bone in and skin removed
3 cups chicken broth or stock

 

Directions:

Pre-heat oven to 400 degrees

Grease a 2-quart casserole.  Sprinkle the onion soup mix and uncooked rice on the bottom of the casserole.  Sprinkle the salt and chopped onion over the rice.  Add the butter, cut into small pieces, or the olive oil.  Spread chicken over all and add the chicken broth or stock.  (I like to add some AHA Herb Mix, about 2 teaspoons just for a little spice.)

Bake, covered tightly, for one hour.
