Fondant Potatoes

Ingredients:

1 pound old potatoes
2 cups chicken or beef stock
1 Tbs. butter, melted
1 tsp. parsley, finely chopped

 

Directions:

Peel the potatoes and slice into ½ inch rounds.

Place potato slices in a shallow baking dish and cover halfway up with the stock. Brush with the melted butter.

Place in a 450° oven and bake till the potatoes are tender.

Brush the potatoes with butter during the cooking process.

The potatoes are usually cooked when the stock is absorbed.

Place in a serving dish and serve with chopped parsley.
