Rosemary Pork Roast

Ingredients:

4 pound pork roast, bone-in preferred
3-4 tablespoons olive oil for dressing; more olive oil for searing meat
3-4 cloves garlic, minced
3 tablespoons dried rosemary
Salt and pepper

 

Directions:

Preheat oven to 375 degrees.   Put the olive oil in a bowl and put the minced garlic and chopped rosemary in the oil to infuse the flavors.  You can do this earlier in the day to really let the flavors develop.
On the stove, heat an oven-proof skillet large enough to hold the roast.  Add a couple of tablespoons of olive oil (not the infused oil) to the pan.  Salt and pepper the outside of the pork roast, then sear it on all sides.
Rub the roast liberally with infused olive oil, spreading the garlic and rosemary over it. Place the skillet in the oven.
Bake at 375 degrees for 2 hours, or until the internal temperature of the pork reaches 160 degrees.
