Turkey Spaghetti

Ingredients:

1/2 cup Olive oil
6 slices bacon
1 cup fresh chicken or turkey cut into bite-size pieces
2 cloves garlic, minced
1/4 cup sliced green onions
1 large can diced tomatoes
2 tablespoons chopped fresh basil
Salt and pepper
1/4 teaspoon coarse ground black pepper
1/2 pound spaghetti
Freshly grated Parmesan cheese

 

Directions:

In large skillet, heat olive oil. Brown the bacon.  Remove to paper towel to drain.  Put turkey or chicken into skillet.  Season with salt and pepper and then cook for 3-5 minutes until cooked through.  Remove the meat from the skillet and add the garlic and green onions.  Sauté the vegetables for one minute. Stir in tomatoes, basil, salt and pepper; cook 2 minutes, stirring frequently. Prepare pasta according to package directions; drain. Crumble bacon then toss tomato mixture with hot pasta and add meats. Sprinkle with Parmesan cheese and serve immediately.
