Sugar Cookies

Soft and delicious!

Ingredients:

½ c. margarine
½ c. oil
½ c. granulated sugar
½ c. powdered sugar
1 egg
1 t. vanilla
2 c. + 2 T. flour
½ t. baking soda
½ t. salt
½ t. cream of tartar

 

Directions:

Cream together the margarine, oil, and granlated sugar.  Add powdered sugar, egg, and vanilla.  Mix well.  Add all other ingredients, mix well.  Chill 1-2 hours.

Roll into small balls.  Place on greased cookie sheet.  Then flatten cookies by dipping the bottom of a juice glass into water and then into granulated sugar and using it to gently press each cookie flat.  Additional granulated sugar (colored for holidays) may be added to the cookie tops.  Bake at 350 degrees 7 or 8 minutes or until lightly browned and set.

This recipe makes an exceptionally good, light cookie that melts in your mouth.  However, do not try to use this recipe if you are planning to cut cookies into shapes as the powdered sugar in these cookies make them a little too crumbly for holding cut shapes.
