Carrot Cake

Ingredients:

3 cups grated carrots
1 cup chopped nuts (walnuts or pecans)        
2 c. sugar
1½ cups salad oil
4 eggs
3 tsp. cinnamon
1 tsp. salt
2 tsp. soda
1 Tbsp. vanilla
2 cups plain flour

 

Directions:

Mix well and bake 45 min. to 1 hour @ 325 degrees
  
Icing:
1 8-oz. package cream cheese
1 stick butter 
1 tsp. vanilla
1 box powdered sugar
