Mom’s Egg Pancakes

Ingredients:

1 cup milk
3 eggs, beaten
1 cup flour
¾ tsp. salt
1 Tb. Sugar
Olive oil

 

Directions:

Stir ½ cup of the milk into the eggs.  Add the flour, salt and sugar all at once.  Beat it with a mixer until smooth.  Add the remaining milk.  Mix it in with the mixer.  Heat a large skillet, then brush the bottom with olive oil.  Add enough batter to skillet to cover bottom.  When it is browned on one side, flip it over.  Don’t cook too long on the second side or it will be tough.

Serves: 3 (dinner-plate size pancakes) or makes 10 crepes
