Spanish Rice

Ingredients:

1 tablespoon olive oil
1 medium onion, diced
1 pound hamburger
¾ cup uncooked rice
1½ cups tomato juice
1 cup frozen peas
Salt & Pepper

 

Directions:

Preheat oven to 400 degrees.

Heat the olive oil in a skillet then brown the onion and hamburger. Drain off fat. Sprinkle the uncooked rice, hamburger, peas, salt, and pepper in bottom of a 2-quart casserole. Add the tomato juice and bake, tightly covered, for one hour.
