Kim's Homemade Sloppy Joes

By Kim Ohlweiler

Ingredients:

1 pound ground beef
½ pound of Bob Evans Mild Sausage
2 tablespoons olive oil
1 small onion, diced
1 green pepper, diced
3-4 cloves garlic, diced
1 tablespoon red wine vinegar
3 tablespoons tomato paste
1 dried bay leaf
1 teaspoon dried basil
1 teaspoon dried thyme
2 teaspoons cumin
3 tablespoons Worcestershire sauce
2 teaspoons prepared horseradish
1 cup ketchup
1 13-14 oz. can diced tomatoes, drained
Salt
Pepper

Directions:

Put sausage and hamburger in a bowl and mix them together with your hands. Set aside.

Heat the olive oil in a large skillet. Add the onions and green pepper and cook them until they start to caramelize. Add the garlic and the red wine vinegar to help de-glaze the pan. Add the tomato paste and all of the dried spices. Cook for a couple of minutes to bring out the flavors of the spices. Add the meat mixture, the Worcestershire sauce, the horseradish and the ketchup. Break the meat up with a wooden spoon. As the meat begins to brown, stir in the tomatoes. Allow the whole mixture to simmer until thickened. Serve on big buns.

(Don’t be too picky with ingredients or quantities! Put in what you like in the quantities that create the consistency you want.)
