Beany Macaroni

Ingredients:

Olive oil
1 medium onion, chopped
1 pound hamburger
1 pound uncooked macaroni
1 29 oz. can diced tomatoes with juice
2 16 oz. cans kidney beans, drained
1 16 oz. can black beans, drained
1 64 oz. bottle tomato juice
3 Tbs. Old Bay Seasoning, divided
1 tsp ground Chipotle Pepper
Salt & Pepper

 

Directions:

Cook the macaroni according to package directions; drain. Meanwhile, brown the chopped onion in a skillet. Add the hamburger and 1 Tbs. of the Old Bay Seasoning and brown it, breaking up the meat as it cooks. Drain off any fat. Add the hamburger mixture, beans, tomato juice, remaining 2 Tbs. of Old Bay Seasoning, chipotle pepper, salt, and pepper to macaroni. Stir and simmer for 10-15 until heated through.
