Hot Crabmeat-Avocado Salad

Ingredients:

8 oz. Crabmeat, cartilage removed (imitation crabmeat may be used)
1/3 c. chopped celery
3 hard boiled eggs, chopped
2 T. pimiento, chopped
1 T. dehydrated onion flakes
½ t. salt
½ c. Mayonnaise or Miracle Whip
3-4 small, ripe avocados
Lemon juice
Salt
½ c. dry bread crumbs, unflavored
¼ c. melted butter

Directions:

Pre-heat oven to 400 degrees.

Mix crabmeat, celery, eggs, pimiento, onion, salt and mayo. Mix well. Cut unpeeled avocados in half lengthwise and remove pits. Brush with lemon juice, place cut side up in glass baking dish and sprinkle lightly with salt. Fill each avocado with crabmeat mixture. Toss bread crumbs in melted butter and sprinkle over avocados. Bake in pre-heated oven for 10 minutes.

Serves: 6-8
