Ceil’s Old Fashioned Picnic Potato Salad
(Bring on the fried chicken - Good!)

Ingredients:

4 c. cooked, peeled, cubed potatoes (about 5 to 6 medium)
1 medium onion, diced fine
2 ribs celery, chopped fine
4 hard boiled eggs, chopped
1 hard-boiled egg sliced
2 heaping tablespoons sweet pickle relish, drained
1 c. to 1 1/2 c. Miracle Whip
3 T. yellow mustard
1 t. salt - or to taste pepper - to taste
1/2 t. celery seed
1 T. sugar

Directions:

Mix all ingredients except SLICED hard-boiled egg in large mixing bowl. Mix thoroughly. It is best to make sure you mix very well after each new item is added. Use sliced hard-boiled egg to decorate the top of the potato salad after you are finished mixing. Sprinkle with a little paprika for color if you wish. Cover with aluminum foil or plastic wrap and refrigerate 3 hours to overnight before serving.
