Ceil's House

SAUSAGE QUICHE

Great brunch dish served with fresh fruit, or salad and rolls.


Ingredients:

1 lb. pork sausage
1 onion, cut into fourths
2 lb. swiss cheese, grated
1 T. flour
2- 8 in. unbaked pie shells
4 eggs, lightly beaten
1 c. light cream
½ t. salt
¼ t. ground pepper
¼ t. nutmeg
2 T. parsley
½ t. sage

Directions:

Cook sausage and onion until brown and crisp. Sprinkle grated cheese with flour. Layer the sausage, then the cheese into pie shells. Place eggs, cream, salt, pepper, nutmeg, parsley and sage into blender and mix well. Pour over sausage and cheese. Bake at 375 degrees for 35-40 minutes, until knife inserted near center comes out clean.

Serves: 4-6
