Restaurant-Style Buffalo Chicken Wings

"This is the similar to the hot wings recipe served at a popular restaurant chain. If you have ever had them, you have to love them."

Ingredients:

Oil for deep frying
2/3 c. butter
1/3 c. Texas or Franks hot sauce
¼ t. ground black pepper
¼ t. garlic powder
¼ t. onion powder
½ t. seasoned salt
½ c. flour
¼ t. paprika
¼ t. cayenne pepper
10 chicken wings

Directions:

Heat oil in a deep fryer or heavy, deep pan to 375 degrees. The oil should be deep enough to cover wings entirely – an inch or so deep. Combine the butter, hot sauce, pepper, garlic and onion powder, and seasoned salt in a small sauce pan over low heat. Heat and stir until butter is melted and mixture is well-blended. Remove from heat and set aside.

In a small bowl, mix the flour, paprika, and cayenne. Place chicken wings in large plastic or glass dish and sprinkle the flour mixture over them, toss with fingers until evenly coated.

Most important step in preparation: Cover dish and refrigerate 1 hour to 90 minutes.

Fry coated wings in hot oil for 10-15 minutes, or until parts of wings begin to turn brown. Remove from heat, place in serving bowl, add hot sauce mixture and stir together. Serve with ranch or blue cheese dressing.

(Note: The sauce for this recipe is “mild” but it can be made hotter simply by changing the ratio of butter to hot sauce. If you change it to a half and half ratio, the sauce will be hotter.)
